MMmmm the perfect warm sweet treat — and an alternative to the traditional Thanksgiving pies. . .

Cranberry-Orange Cookies

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 tablespoon orange zest (from about 1 orange)

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 1/2 cups old-fashioned oats

  • 1 cup dried cranberries

  • Optional: 1/2 cup chopped walnuts or white chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  2. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together until creamy and smooth.

  3. Mix in the eggs one at a time, followed by the vanilla extract and orange zest.

  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture and mix until just combined.

  5. Stir in the oats and dried cranberries (and optional mix-ins like walnuts or chocolate chips).

  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  7. Bake for 10-12 minutes or until the edges are lightly golden. The centers might look slightly underbaked but will set as they cool.

  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Tip: Add a splash of orange juice if you want a more pronounced orange flavor! YUM!
