Whew. We made it through all the Election commercials and texts and emails, and now it’s time for some self-love. How about some gooey, delicious Chocolate Cherry Cake and a special Autumn Amaretto Sour? Yes, please. We deserve this.

This is the Extra, Extra treat we’ve been craving. Bring it on.

Chocolate Cherry Cake

Ingredients:

  • 1 box chocolate cake mix (any brand)

  • 1 can (21 oz) cherry pie filling

  • 3 large eggs

  • 1/3 cup vegetable oil

  • 1 teaspoon almond extract (optional, but adds great flavor)

  • Optional garnish: whole cherries

For the Chocolate Glaze (optional but recommended)

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup heavy cream or milk

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

  2. In a large bowl, combine the chocolate cake mix, cherry pie filling, eggs, and oil. Mix well, but don’t overmix — the cherries should stay a bit chunky. If you’re using almond extract, add it in with the other ingredients.

  3. Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

  4. Optional glaze: While the cake cools, place the chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until smooth and melted. Pour the glaze over the cooled cake, spreading it evenly with a spatula. Garnish with whole cherries.

  5. Let the glaze set (about 10–15 minutes), then slice and enjoy! YUM!
