This is the Extra, Extra treat we’ve been craving. Bring it on.
Chocolate Cherry Cake
Ingredients:
1 box chocolate cake mix (any brand)
1 can (21 oz) cherry pie filling
3 large eggs
1/3 cup vegetable oil
1 teaspoon almond extract (optional, but adds great flavor)
Optional garnish: whole cherries
For the Chocolate Glaze (optional but recommended)
1 cup semi-sweet chocolate chips
1/2 cup heavy cream or milk
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
In a large bowl, combine the chocolate cake mix, cherry pie filling, eggs, and oil. Mix well, but don’t overmix — the cherries should stay a bit chunky. If you’re using almond extract, add it in with the other ingredients.
Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Optional glaze: While the cake cools, place the chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until smooth and melted. Pour the glaze over the cooled cake, spreading it evenly with a spatula. Garnish with whole cherries.
Let the glaze set (about 10–15 minutes), then slice and enjoy! YUM!
