Pumpkin Chocolate Chip Cookies
Ingredients:
1 cup pumpkin puree (not pumpkin pie filling)
1 cup sugar (white or brown)
1/2 cup vegetable oil (or melted butter)
1 large egg
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chocolate chips (semi-sweet or dark)
Instructions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the pumpkin puree, sugar, oil, egg, and vanilla extract until smooth.
In a separate bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt.
Gradually stir the dry ingredients into the wet mixture until fully incorporated. Don't overmix.
Fold in the chocolate chips.
Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are set but the cookies are still soft in the center.
Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. YUM!
