It’s Hump Day! And it’s the first day of May! So let’s kick off this new month with a little midweek celebration! A nice, cool, refreshing cocktail in one hand and some sweet, gooey, gluten-free cookies in the other — yes, please.

Celebrate the new season with a sweet, fruity, raspberry cocktail! For a mocktail version, just replace the vodka with sparkling water.
Raspberry Lemonade Cocktail
Ingredients:
1 pint fresh or frozen raspberries
2 lemons
2 tablespoon sugar
4 ounces vodka
Ice
16 ounces lemon sparkling water
Raspberries and lemon slices for garnish
Instructions:
Muddle 3/4 of the raspberries with the sugar and lemon juice until the berries are crushed. Add the vodka.
Add a handful of ice cubes to the jar. Close the lid and shake vigorously.
Pour about 4 ounces of the raspberry lemon vodka mixture into each glass. Top each with 4 ounces of sparkling water. Garnish with raspberries and lemon slices, if desired. CHEERS!
