A great de-stressor is a sweet, warm, comfort food like banana bread. While there are a few versions of Betty White’s Banana Bread recipe circulating, we liked this one the best. Enjoy!
Betty’s Banana Bread
Ingredients:
2 to 3 ripe bananas, mashed
1/2 cup (1 stick) unsalted butter, melted
3/4 cup granulated sugar
1/4 cup brown sugar (optional, for extra richness)
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon (optional)
1/2 cup chopped walnuts or pecans (optional)
Instructions:
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
In a large bowl, mash the bananas with a fork until smooth. Stir in the melted butter. Mix in the sugars, eggs, and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Fold in nuts if using.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice and enjoy with a little butter or a drizzle of honey! YUM!
