We’re saying goodbye to February and moving into March with some sweet green treats. Keep these recipes handy for your St. Patrick’s Day fun!

Granny’s Green Pistachio Cookies

Ingredients:

  • 1 box (3.4 oz) instant pistachio pudding mix

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 1 large egg

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon almond extract (optional, for extra nuttiness)

  • 1/2 cup shelled pistachios, chopped

  • 1/2 cup white chocolate chips (optional)

  • A few drops of green food coloring (optional, for extra color)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together the flour and baking soda.

  3. In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Beat in the egg, vanilla extract, almond extract, and pistachio pudding mix. Add a few drops of green food coloring if using.

  5. Gradually mix in the dry ingredients until just combined. Fold in the chopped pistachios and white chocolate chips.

  6. Drop tablespoon-sized dough balls onto the baking sheet, spacing them about 2 inches apart.

  7. Bake for 10-12 minutes, or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack. YUM!
