Happy Almost Thanksgiving! We hope you get to spend tomorrow with those you love, enjoying some amazing food together. We’ve got a couple Turkey Week treats for you to add to your spread. This Slow Cooker Pumpkin Bread is the low-stress sweet treat we all need this weekend. And the Spiked Cider Punch is a perfect fall-inspired sip for the adults at your gathering. Cheers!

This amazing bread is perfect for a sweet dessert, an in-between-meals snack, or an easy Black Friday breakfast. Enjoy!

Slow Cooker Pumpkin Bread

Ingredients:

  • 1/2 cup vegetable oil

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 2 large eggs

  • 1 (15 ounce) can of pumpkin

  • 1 1/2 cups flour

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1 tsp baking soda

  • 1/3 cup nuts, optional

Instructions:

  1. Blend oil and both sugars in a large mixing bowl.

  2. Stir in beaten eggs and pumpkin. Add remaining dry ingredients and mix well.

  3. Pour batter into a greased bread or loaf pan.

  4. To prevent scorching the bottom of the pot, wad and flatten balls of aluminum foil and place them on the bottom of the slow cooker. Add two cups of water to slow cooker and gently place the pan inside, on top of aluminum foil.

  5. Cover the loaf pan with ten paper towels. (This is to trap condensation and keep the bread from becoming mushy.)

  6. Place the lid on top of the slow cooker and bake on high for 3 hours.

  7. Drizzle the top with your favorite frosting or glaze, or leave it plain!
