Strawberry Pinwheels
Sweet strawberries and soft vanilla cookies mixed together to make these easy, kid-approved pinwheels!
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup strawberry jam (or preserves)
Powdered sugar (for dusting, optional)
Instructions:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is too sticky, you can add a little more flour, a tablespoon at a time, until it reaches a workable consistency.
Divide the dough into two equal portions and shape each portion into a ball. Flatten each ball into a disk, wrap them in plastic wrap, and refrigerate for at least 1 hour, or until firm.
Preheat your oven to 350°F and line baking sheets with parchment paper. Remove one disk of dough from the refrigerator and place it on a lightly floured surface. Roll out the dough into a rectangle, about 1/4 inch thick.
Spread half of the strawberry jam evenly over the rolled-out dough, leaving a small border around the edges.
Starting from one of the longer edges, carefully roll up the dough into a tight log, similar to a jelly roll.
Repeat the process with the remaining disk of dough and strawberry jam.
Using a sharp knife, slice each log of dough into 1/4 to 1/2 inch thick rounds. Place the rounds on the prepared baking sheets, spacing them about 1 inch apart.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once cooled, you can dust the cookies with powdered sugar if desired. YUM!
