On Hump Day, we celebrate! And we do that by treating ourselves to a little sweet and a little sip. Here ya go, friend. You deserve it.

Welcome, fall! And welcome all the sweet treats that fall brings, like this Skillet Apple Cobbler. Mmmm.
Skillet Apple Cobbler
Ingredients:
4 cups of peeled, sliced apples (Granny Smith or Honeycrisp are great choices)
1/4 cup brown sugar
1/4 cup granulated sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla extract
1 tablespoon lemon juice
2 tablespoons butter
For the topping:
1 cup all-purpose flour
1/2 cup granulated sugar
1 1/2 tsp baking powder
1/4 teaspoon salt
1/2 cup milk
1/4 cup (1/2 stick) unsalted butter, melted
Instructions:
Heat your skillet (10-inch cast iron works well) over medium heat and melt the 2 tbsp butter. Add the apples, brown sugar, granulated sugar, cinnamon, nutmeg, vanilla, and lemon juice. Stir to combine, and cook for about 5-7 minutes until the apples start to soften and the sugar forms a syrupy sauce.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until just combined to form a batter.
Spread the batter over the apple mixture in the skillet. It doesn't have to cover the apples completely.
Place the skillet in a preheated oven at 350°F (175°C) and bake for 25-30 minutes, until the topping is golden and a toothpick inserted into the dough comes out clean.
Let the cobbler cool for a few minutes, then serve warm with a scoop of vanilla ice cream! YUM!
