Happy Hump Day! I know it’s cold all over the US right now. (Even in Florida, we’re waking up to the low 30s!) So I think we need some warm and toasty treats this week. Our Cozy Chocolate Souffle and Mulled Dr. Pepper (yes, Dr. Pepper) are your reward for making it through another cold January week! Grab your fuzzy socks, a fluffy blanket, and enjoy!

This cozy, warm, and gooey souffle is what we need on a cold January night.
Cozy Chocolate Souffle
Ingredients:
1/4 cup unsalted butter
1/4 cup all-purpose flour
1/4 cup cocoa powder
1 cup whole milk
4 ounces dark chocolate, finely chopped
1 teaspoon vanilla extract
4 large egg yolks
5 large egg whites
1/4 teaspoon cream of tartar
1/2 cup granulated sugar
Powdered sugar for dusting (optional)
Instructions:
Preheat your oven to 375°F. Grease the insides of individual soufflé dishes or ramekins with butter and sprinkle with sugar.
In a saucepan over medium heat, melt the butter. Add flour and cocoa powder, whisking constantly until smooth and well combined.
Gradually add the milk to the mixture, whisking continuously to avoid lumps. Cook until the mixture thickens. Remove from heat and stir in the chopped dark chocolate until melted. Add vanilla extract and mix well.
In a separate bowl, beat the egg yolks. Gradually whisk in the chocolate mixture until smooth.
In a clean, dry bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar while continuing to beat until stiff peaks form.
Gently fold one-third of the egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until no white streaks remain.
Spoon the mixture into the prepared soufflé dishes, filling them about 3/4 full.
Run your thumb around the inside edge of each dish to create a slight groove (this helps the soufflé rise evenly).
Place the soufflé dishes on a baking sheet and bake in the preheated oven for 18-20 minutes or until the tops are set and cracked.
Dust with powdered sugar if desired, and serve immediately.
