Fall is upon us. And to most of us that means changing leaves, a smidge of relief from the crazy heat, and starting to think about those cozy comfort foods of autumn. This week’s Extra, Extra! is serving up a heavenly dessert and a sweet mocktail using one of our fall favorites—apples! Save these recipes for your fall get-togethers, school events, tailgates, and even just family nights at home.
YUM!
Sink your teeth into this delicious, easy-to-make cake for a little bit (or a whole lot) of fall goodness.
Crock Pot Apple Pie Cake
Ingredients:
1 cup flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
3/4 teaspoon salt
4 medium-sized cooking apples, chopped
1/3 cup Egg Beaters (or substitute real egg whites)
2 teaspoons vanilla
Directions:
Combine flour, sugar, baking powder, ground cinnamon, and salt.
Add apples, stirring lightly to coat.
Combine Egg Beaters (or egg whites) and vanilla. Add to apple mixture. Stir until just moistened.
Spoon into lightly greased 4-quart (I used a 5-quart) crock pot.
Cover. Bake on high 2 1/2 to 3 hours.
Serve warm. *We love it with a scoop of vanilla ice cream or a spoonful of whipped cream on top.
CHEERS!
This fall-inspired mocktail combines the warm, comforting flavor of spiced apple cider with a refreshing fizz, making it a perfect non-alcoholic beverage for autumn gatherings or simply a cozy night in by the fireplace. Enjoy!
