Happy Wednesday! Yep, it’s Hump Day, and we deserve a little treaty treat, don’t ya think? How about something cool and sweet, and easy to make? Yes, please.

YUM!

Mmmm! Gooey, melted chocolate dripped over a sweet, ripe banana and frozen = a perfect summer treat!

Chocolate Banana Pops

Ingredients:

  • 2 ripe bananas

  • 1 cup of chocolate chips (milk, dark, or semi-sweet, based on your preference)

  • 1 tablespoon of coconut oil (optional, helps in smoothing the chocolate)

  • Toppings of your choice (sprinkles, chopped nuts, shredded coconut, etc.)

  • Popsicle sticks or skewers

Instructions:

  1. Prepare the Bananas:

    • Peel the bananas and cut them in thirds or fourths, whatever you prefer.

    • Insert a popsicle stick or skewer into each banana piece.

  2. Melt the Chocolate:

    • In a microwave-safe bowl, combine the chocolate chips and coconut oil.

    • Microwave in 20-30 second intervals, stirring after each interval, until the chocolate is completely melted and smooth.

  3. Dip the Bananas:

    • Hold the banana by the stick and dip it into the melted chocolate, covering it completely.

    • Let any excess chocolate drip off back into the bowl.

  4. Add Toppings:

    • Immediately sprinkle your desired toppings over the chocolate-covered bananas while the chocolate is still wet.

  5. Freeze:

    • Place the chocolate-covered bananas on a baking sheet lined with parchment paper.

    • Freeze for at least 2 hours, or until the chocolate is firm and the bananas are fully frozen.

  6. Enjoy:

    • Once frozen, your chocolate banana pops are ready to enjoy! You can store any leftovers in a sealed container in the freezer. YUM!
