Warm peaches and cold ice cream are a match made in September heaven.
Auntie’s Peach Crisp
Ingredients:
For the filling:
6-7 ripe peaches, peeled, pitted, and sliced (about 5 cups)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch or all-purpose flour
1/2 teaspoon ground cinnamon (optional)
For the crisp topping:
1 cup old-fashioned oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cut into small pieces
Instructions:
Preheat your oven to 350°F.
In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, cornstarch (or flour), and cinnamon (if using). Toss until the peaches are evenly coated. Pour the peach mixture into a greased 9x9-inch (or similar size) baking dish.
In a separate bowl, mix together the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter pieces to the mixture. Use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Sprinkle the crisp topping evenly over the peach filling.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
Allow the Peach Crisp to cool slightly before serving. It's delicious on its own or with a scoop of vanilla ice cream or whipped cream. YUM!
