Happy Hump Day! I’m feeling the holidays eeeeverywhere, so I think we all need/want/deserve a little treat or two. . .
YUM!
Sweet, sweet goodness. Bring this to your Grandma’s house on Christmas and wait for the compliments. Just be sure to save a slice for yourself.
Salted Caramel Pound Cake
Ingredients:
For the Cake:
1 cup (230g) unsalted butter, softened
2 cups (400g) granulated sugar
4 large eggs
1 teaspoon vanilla extract
2 1/2 cups (310g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (240ml) whole milk
For the Salted Caramel Sauce:
1 cup (200g) granulated sugar
6 tablespoons (90g) unsalted butter, cubed
1/2 cup (120ml) heavy cream
1 teaspoon sea salt
For Topping:
Optional: Whipped cream, extra caramel drizzle, or chopped nuts.
Instructions:
Make the Cake:
Preheat your oven to 325°F (163°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
In a large bowl, cream butter and sugar together until light and fluffy, about 3 minutes.
Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Begin and end with the flour mixture.
Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
Bake for 60–70 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Make the Salted Caramel Sauce:
In a medium saucepan over medium heat, melt the sugar, stirring constantly with a wooden spoon until it turns amber in color.
Carefully add butter (it will bubble up), and stir until fully incorporated.
Slowly add heavy cream while stirring. Let it boil for 1 minute, then remove from heat. Stir in sea salt and let cool slightly.
Assemble:
Once the cake is completely cooled, drizzle salted caramel sauce generously over the top.
Optional:
Add whipped cream, more caramel, or nuts for extra indulgence. YUM!
CHEERS!
Oh yes, we’re taking the salted caramel a step further. This is what we need when we’re surrounded by judgey inlaws, incessant Christmas carols, and Aunt Edna’s 1800 questions. Cheers, mamas!
